From the ancient and honoured tradition of Tuscan hospitality comes this fabulous wine: Vin Santo (''Holy Wine''). Its dry structure, traditional of the old times classic Vinsanto, balanced by a natural delicate sweetness makes it a fine dessert wine. At Castello di Poppiano the must obtained from partially dried Malvasia grapes is fermented and matured for years in oak and chestnut barrels (''caratelli'') in the spectacular Vinsantaia (the Vinsanto winery) in the Main Tower (''Torre Grande'') of the Castle.

Soil :  Locally called ''Alberese'', medium textured soil deriving from calcareous conglomerates intermixed with clay, well drained.

Vines per Hectare :  3300-4700
Grape Varieties Malvasia
Harvest :  September 15th to 30th. Passerillage raisining of the grapes on ''tenditoi'' (drying plateaux) in the Castle up to mid December to attain a sugar concentration of 28-30%
Wine Making :  In chestnut and oak ''caratelli'' (the traditional Vinsanto barrel) in the main tower of the Castle.
Maturing :  Fermentation and maturing in caratelli continues from 3 to 4 years, until the almost complete transformation of the sugar content into alcohol.
Tasting Notes  :  Color: amber, with a wonderful, appealing gold light.
Nose: ample and aromatic. At first dry fruits such as hazelnuts and almands, then nuances of citrous and dried figs.
Taste: round and elegant. Sligltly sweet but dry on the finish with a sligt nutty flavour. A true ''vino da meditazione'' - a wine worthy of standing alone.
