"Laudemio" La Costa
Extravirgin Olive Oil
 
The feather in Castello di Poppiano's cap is Laudemio olive oil, a selection obtained by early harvest from the best olive groves in the Estate, those of Podere La Costa with an extreme care in mastering the whole production cycle from tree to mill and on to bottle.
 
Olive Groves :  Antico Podere La Costa del Castello di Poppiano
Elevation - Exposure :  250-290 m (820-950 ft) a.s.l. - South/South-west
Soil :  Locally called ''Alberese'', medium textured soil deriving from calcareous conglomerates intermixed with clay, well drained.
Plants per hectare :  550 olive trees
Olive Varietals :  Frantoio 90%, Pendolino e Moraiolo 10%
Production per hectare  :  4 quintals (approximately 0.7 kg/pianta) - 0.4 tons (20 fl.oz./plant)
Harvest  :  Early hand harvest, within the first half of November, to obtain the most typical caracteristic of the Florentine hills olive oil: intensively fruity aroma and taste.
Processing :  The availability of our own oil mill enables us to process the olives immediately after harvest (within 24 hours) and optimise pressing at strictly controlled cool temperatures, below 25-26° C (77-79°F).
Yield in Olive Oil  :  10-12% (ratio between the weight of oil and that of the olives)
Conservation :  In steel vats after filtering
Tasting :  Colour: Limpid, fresh green with pleasant bright reflections.
Nose: Intensively fruity, reminding fresh olives with pleasant flowery and recently cut grass scents.
Taste: Fresh almonds accompanied by a fruity scent of olive with a slight bitter green olive taste. Its very definite spiciness well harmonizes with the complex intense and fruity taste with a hint of artichoke.
